This amazing coffee comes way of a local to Tennessee importer called "Bridging Tables". They've are reimagining the coffee market by helping everyone along the process. The are making waves in the industry "from farm to fulfillment". We've received three coffees from them now and are always happy with the quality and customer service we've received.

Meet Efren Echeverri: Innovator in Coffee Post-Harvest Processing

Efren Echeverri is a forward-thinking coffee entrepreneur from Palestina, Colombia, dedicated to elevating coffee quality through innovative fermentation techniques. Since 2020, after studying fermentation science with Julian Cucuñame, Efren has specialized in creating mosto—a fermented liquid made from coffee cherries or other fruits with sugar in a low-oxygen environment. This process enhances the flavor potential of coffee through natural bacterial cultivation.

    • Typica Tropical Mosto: Co-fermented with strawberries and grapes.
  • Precision Fermentation: Mosto preparation takes 10 days, with pH and temperature monitored every six hours.

Efren’s coffees are sourced from his family farms, all located in Palestina, a region known for shaded coffee farming. This traditional practice protects the soil and sustains healthy coffee trees, contrasting with Colombia's rising trend of shadeless monoculture.

Beyond coffee, Efren is exploring sustainable agriculture. He produces organic fertilizers using microorganisms from biodiverse shaded farms.
